With a very slight taste of pumpkin, these little muffins are a huge hit with our family. We started making these when “Our Girls” were coming to visit us on the Outer Banks. One bit of a warning, these little muffins are very addicting. You may find yourself in a sugar coma if do not eat these in moderation. And even if you are not a fan of pumpkin, you may still like this recipe. The pumpkin taste is very slight with the milk chocolate chips stealing the show.
- 3 cups all-purpose flour
- 2 cups sugar
- 2 cups pumpkin
- 1 1⁄2 cups vegetable oil
- 1 1⁄2 cups milk chocolate chips
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 4 eggs
- Pre-heat oven to 350.
- Combine flour, cinnamon, salt, and baking soda.
- In another bowl beat the eggs, sugar, pumpkin, and oil.
- Stir in dry ingredients.
- Fold in chocolate chips.
- Pour into two greased 8x4x2 loaf pans.
- Bake for 60-70 minutes.
We also make this recipe as muffins or mini muffins.
